An international expert conference entitled The Food Journeys will take place on 19 September 2024 at the National Museum of Agriculture in Kačina, and a few days later two follow-up highly specialised courses on historical cooking will be held at the National Museum of Agriculture in Prague.
There are many topics in the history of food, eating and dining that may be of interest to us today. We discover the symbolic level of food and its consumption, we find out what potential food had, and has, as a symbolic means of communication. In addition to perceiving the intoxicating flood of colours, smells and tastes of food, we ask how different foods came into kitchens, how they were selected, how they were processed, how knowledge of food preparation was passed on and what we know about it all today. Can we reconstruct, describe and interpret these processes?
The Food Journeys project aims to address the topic of food on a professional theoretical level and at the same time leave a tangible trace. Within the framework of the project, an international expert conference entitled The Food Journeys will take place on 19 September 2024 at the National Museum of Agriculture in Kačina, and a few days later two follow-up highly specialised courses on historical cooking will be held at the National Museum of Agriculture in Prague.
Ivan Day, an internationally renowned food historian, who is dedicated to the reconstruction of historical dishes and is the author of the Food History Jottings blog, has taken over the expert guarantee and role of the conference guide. As part of the conference, those interested can also take part in a reconstruction of a historical feast. At two follow-up courses in Prague, they will then prepare sorbets or sugar decorations according to original recipes and procedures.
